    Description

    My name is Dave, I'm the chef/owner of Pizza Moto Restaurant in Red Hook Brooklyn. Over the past 13 years that we've operated Pizza Moto, I've build 7 unique wood-fired pizza ovens out of steel and stone for use in all our mobile wood fired oven locations. The oven I have for sale was constructed in the summer of 2020 to be used inside our restaurant while we took our 120-year old brick oven off-line to repair it. We called it our "life boat oven". The oven for sale is completely handmade and unique in its design and functionality. It was designed to be lightweight so that it could be brought through a standard 32" doorway in pieces and assembled inside our restaurant without the need to remove large portions of our storefront in the process.
    The oven dome (the internal dome that encloses the stone floor and the fire) is made from a 1/4" thick steel tank head purchased from an industrial tank fabricator in Ft. Worth, Texas. The dome sits on a cooking surface constructed of a layer of 2" mineral wool insulation board, a layer of 2.5" standard fire bricks and the final cooking surface which can be made of 12"x 12" firebrick tiles or my preference: soapstone. (More on the cooking surface at the end) The dome fits over top of the oven floor and the entire volume is wrapped in two layers of batted mineral wool insulation rated for 2500 Deg F. The insulation is enclosed in an outer skin of steel sheet metal. The chimney vent is internal (between the outer and inner layer of the oven) and connects to 10' of stainless steel chimney pipe. There entire oven sits on a 4-wheeled stand that lets you move it around on smooth surfaces.
    The internal oven floor diameter is a 60" circle and the oven stands 6' tall from the floor to the "lid" on top.
    We have only used this oven for 4 months (100 or so days) and then disassembled it and put it into local storage for use at our beach location in the Rockaways.
    Some caveats...The cooking surface of the oven floor, the stone material that we put the pizza directly on top of was made from soapstone scraps that we had from our original brick oven in our restaurant. When we took the oven apart to store it, many of the old soapstones cracked and were ultimately unusable again. That means that the oven will need a new cooking floor which can be made from several easy to find materials. Fire brick in whatever size you want to use sells for around /sqft and soapstone which is a superior material for many reasons in my opinion, sells for around /sqft. (The total square footage of this oven floor is 19.6 sqft ) *I have a soapstone vendor in NJ that we've worked with over the years that I can make introductions with or depending on your level of DIY comfort, you can take remnants from his dumpster and cut them to size with an angle grinder fitted with a tile blade.
    Right now the oven is in storage in it's broken-down state and will need to be reassembled. I can assist in that process if the final location is reasonably close to Brooklyn. I can also host someone in our restaurant to learn how to make pizza if there's interest.
    Assembling this oven takes a little doing but you will find that this oven is a tough-as-nails workhorse oven that you can feel secure in knowing that it can not be shattered on the road like a traditional masonry pizza oven. It can easily be used as the core of a mobile wood-oven pizza business mounted on a trailer or a flatbed pickup for catering and events as we have done (you can easily make back your investment in a weekend) or it can be assembled in a backyard for recreational use.
